Pickled green tomatoes bear foreign fruit

Tomatoes are a temperamental crop. They require careful watering to reach maturation and water is a luxury Victorians have been forced to ration after years of prolonged drought.

But amid the heat and dry winds, a specialist tomato farm has thrived in the region of Boort, 119km north-west of Bendigo, according to The Australian Financial Review.

Co-founder Marilyn Lanyon said that having done some market research she realised "we had one green tomato product that was quite unique internationally, and as the margins narrowed we decided to look into processing [it] ourselves".

The result was a line of preserved green tomato products named Simply Tomatoes.

"It's a pickled green tomato product that we do. Austrade have showcased our products in many countries and they have not found anything similar - outside of Italy - anywhere else in the world."
